Kid I got 20 years on you, you're the one that doesn't know sh1t My baby momma has been a server her whole life, she manages a restaurant (2 of them, same guy owns them) she still waitresses too. She works at a seasonal place, that is mobbed during the spring/summer. Has nice outside seating right on the ocean. She takes home 400+ working a double from 12 to 10. She works her ass off and is great at being a server That's 40 an hour. What restaurant on earth would pay someone 40 an hour for being a waitress? Because many other countries have a vastly higher min. wage than the U.S. When I was in Switzerland in 2003 the min wage back then was the equivalent of around $25 US / hour. Raise food and drink prices across board by X% to cover the raise in salary to servers. B. Pay servers a fair wage plus a profit sharing bonus equal to their average in tips. I guess maybe, though in this day and age when most retail businesses use computerized point of sale systems I would find it fairly doubtful. If you can get your customers to play ball - which apparently these people can being "filthy rich" - getting around credit card fees is plenty enough reason in itself to run a cash business. As I mentioned, it's tougher to do now that so many people use debit cards instead of cash, but restaurants, food trucks, hot dog stands, ice cream trucks, pizza joints, and of course, casinos are all ripe for skimming. It's also very simple for a manager/owner to void cash transactions in a POS system at the end of the night and skim the cash from those transactions.
