Cushion Meat - cut

Never heard of this.

 

Guess used for tamale. Shoulder used for carnitas?

 

I thought it was belly, strap cut?

 

The "cushion" comes from the Pork Shoulder Picnic (Arm). The picnic shoulder is more economical than the Boston Butt, but it also contains more fat than the blade shoulder. When the bone and fat is trimmed an cooked it results in a very rich flavorful piece of meat. large lean muscle, hence called the "cushion".

I thought they boiled whole hog heads for tamales.

Most use pork butts/shoulder.

I went to a Mexican grocery store off 75 in Dallas to track down a check that was forged.

 

While I was waiting to talk to the manager, I came across a bin full of live hog heads. When I got back to my store, my tailors told me they used it for tamales.

 

But this was over 20 years ago.

lol. Why the hell did I type live? A few too many drinks I guess. They clearly werent alive, but they wet gross and creepy.
