How do you cook your steaks?

You use a grill? Charcoal, gas, or wood? Or you use a cast iron skillet? Use the oven?

 

Seen so many different ways and curious as to how you guys actually prepare yours.

 

Most of the time I marinate mine with tenderizing salt and Worcestershire for close to 2 hours. Then grill it on the gas grill. Now, I have been looking into cooking it on an iron skillet with some compound butter sometime havent gotten around to it

Rare Plus on the grill. Salt, pepper and a little olive oil. About 450 degrees for about 5min a side. Nothing fancy.

Medium Rare

Medium rare

Sous vide with a 30 second sear on each side to finish.

Just say you boil your meat for focks sake

Depends.

Now...I have not done sous vide yet...though have heard its focking fantastic.

 

Usually grill...high heat medium rare flip only once and let rest for at least 6 minutes.

Its 50/50 whether I do charcoal or gas. Latelybhavemt really noticed any big difference.

 

Have also done cast Irin skillet (though i still use that in the grill )

 

Medium rare no matter what.

grill or cast iron skillet. when in skillet, baste with butter. mid-rare. i have posted my grilling method before. will find and post tomorrow.

Rib eyes with good fat content. Pan sear in hot cast iron skillet, finish in oven. Rest

 

Salt and pepper only.

I stopped grilling my steaks medium rare myself. It always seeme to mess with my stomach, which means to me its not cooked enough. At a restaurant, I will always get medium rare.

family time...will be brief now and expand later.

 

- you can grill or pan sear

 

- there are two prevailing thoughts on temp before cooking: pull out meat 30 min before cooking. put it on straight from fridge

 

here is how i grill:

- pull steak out 30 min prior to grilling.

- get grill to high heat

- once hot, ensure that grill is clean

- coat steak with olive oil (i like infused oils- garlic, basil, red pepper, etc), season one side (your choice of a rub or just s&p)

- place seasoned side down. season other side.

- once you have good marks, rotate 90 or 120 degrees "10 and 2"

- depending on thickness cook about 5-6 min total per side

- pull steak off a temperature less than what you are seeking. rest. cooking will carry over and bring it to temperature

 

i will talk about searing later.

 

 

searing:

 

i often use a cast iron. set oven at 425

- take steak out of fridge 30 min prior to cooking

- get pan or skillet hot

 

- coat with oil a few minutes before cooking

- season with salt and pepper

 

or season with dry rub

- add butter or to pan

- sear steak

 

or

- add butter to pan

- add whole cloves of garlic, rosemary, thyme

- baste with extra melted butter from pan

 

- turn and place in oven to finish.

- pull a temperature less than desired.

- let rest

Tell me about sous vide. How does that work? That might be a good method for me, lacking a grill here.

Zip lock bag. Boiling water.

 

I remember warming up creamed chipped beef this way before we got a microwave.

Weird. I'm just the opposite. Unless I really know and trust a place, I'll lean towards medium. When I can cook it myself then definitely medium-rare.

No. I was curious as well. I just figured it was the filth beef cattle may live in or something. Maybe just coincidence too.

you can definitely get a mid-well steak that is still tender, but i do not think it is the norm. better places, sure. just ordering it that way anywhere is a crapshoot.

Toss in the smoker to internal temp og 110 and then sear it on both sides

Search function on my phone doesnt bring up what I search typically. Itll bring up off the wall types of stuff and most everything is recent. Ill have to search pages and pages looking for the right thread. Fock that noise

I use the poke test.

 

Touch the tip of you thumb to the tip of your 4 fingers.

 

Then poke the the thumb pad on your palm.

 

Index-rare

Middle-medium rare

Ring-medium

Pinky-well
