gotta do your hollandaise from scratch and adding a little vinegar to your water helps you keep your poached eggs more intact. once you master the technique for hollandaise, you can do other derivatives of it (maltaise, charon, bearnaise, then create your own variations). lump crab or bay shrimp are a nice additions as well.
