Fondue night

Finished xmas shopping today.... tidying house for in-laws arriving tomorrow. easy dinner night of fondue:

 

 

1 1/2 C champagne or dry white wine
1 large shallot minced
7 oz grated gruyere
5 oz grated emmental
3 oz brie (remove rind, then cube)

4 tsp cornstarch
1 tbs lemon juice

simmer champ and shallots for 2-3 min.
over low heat, slowly add cheeses, stir.

 

add cornstarch and lemon juice..... mix until smooth
add mixture to cheese.

 

serve with wurst, apples, pears, cubed bread, and crispy potatoes.
return to heat.

BTW when do you use shallots instead of onion? I've never really understood except it seems shallots are milder?? :unsure:

shallots are generally more delicate and subtle. i like to use them a bit in more complex cooking (more layered flavors). onions are more profound.... i use them more when trying to highlight "onion" flavor

Planning to make this for our regift party. Any other suggestions to accompany the fondue? Well be using it as an appetizer.

I slice and sear the sausages... Use what you like. Last night I used bockwurst. Chicken apple works well.

 

 

 

Potatoes:

Quarter red potatoes. Boil for about 30 min. Toss in melted butter and an herb mix you like (ranch dressing mix is good for quick fix). Bake at 400 for another 30 min.

 

edit:

optional....

while not traditional, i sometimes toss the bread cubes in garlic oil and cook until lightly toasted.

spain and mexico do a variation called queso fundido (with chorizo added into it). I have cooked with people from all areas of the world and have some very talented culinary friends from texas (and other southern states). they loved their velveeta and rotel. i can't get past the velveeta. i also cannot stomach american cheese.

 

 

edit: even chili's does a chili queso that i can enjoy.

there are plenty. when i have used cheddar, it is usually the secondary or tertiary cheese.

Hey Bier, can you sub in something for the cornstarch? Doesn't seem like too much carbs but... sometimes my wife uses xanthum gum as a thickener.

Hey Bier, can you sub in something for the cornstarch? Doesn't seem like too much carbs but... sometimes my wife uses xanthum gum as a thickener.

 

 

i have used it on occasion in other cooking, but not with fondue. i would give it a try, just be cautious of it lumping.

 

also, we are only talking about 1 tbs of cornstarch for about 2 cups of fondue.

If health is your concern fondue is not the way to go.

Maybe substitute corn starch for another glass of red wine?

On an date hiking, I made fondue for one of my exes (34B/C). Used wine, garlic and a couple types of cheese, with no added cornstarch. It turned out OK, but I am not a sophisticated cook by any stretch of the imagination. I warmed it over a can of sterno in an old military bunker where other people had camped, and joked when it included "camp pepper" from the ash/dirt which got in the pot. She seemed to like it though.

 

But yeah, I was trolling Jerry :cheers:

It was more about the diabetes, and specifically, learning where you can and cannot sub for a starch. As Bier pointed out, there isn't a huge amount in his recipe.

Standard Swiss fondue I looked up is emmentaler Gruyere and sharp cheddar. Pretty good w green apple, bread and vegetables

while it can be used, it is neither common nor traditional. swiss and french fondue typically includes gruyere, emmental, appenzeller, vacherin, and comte. my recipe breaks away from tradition by using sparkling wine and brie, and omitting kirsch and garlic. i have also used gouda on occation
