Fun with seafood

We have a great local seafood vendor and I have been wanting to do a seafood dinner with some of our closer friends... finally did it this weekend

starter:  Green papaya salad with jicama, mint, lime dressing with dungeness crab

second: ahi tartare with avocado, seaweed salad, unagi sauce over won ton chips

third: seared U10 scallops with yellow curry sauce over crispy noodle cake

main: grilled salmon and colossal prawns with a citrus, mirin glaze

dessert: key lime "mojito"pie

 

very fun spending good time the kitchen!

finally showing signs of spring/summer and were able to eat outside.  great night.

Yeah, when I see a thread titled "fun with seafood" at this place, I'm not thinking we get a list of food recipes.  Bier Meister phayle.  :(

I've been wanting for a long time to like Salmon. For the health benefits and all. Always hated it to no end. But I finally found a way.

I season the Salmon filet with ground black and red pepper, cook on medium low on the stove in a tablespoon of olive oil. A few minutes on each side. I whip up a tablespoon  or two of wasabi in the mean time. After cooking I sprinkle some Cayenne over the fish and cover it in wasabi.

F'ng delicious. I steam some broccoli, or have a spinach and arugula salad with blueberries, tomatoes and cucumbers dressed in olive oil, and now I love Salmon for life.

Dessert, a few pieces of 70 - 85% cocao dark chocolate along with a glass or two Duckhorn 2015 Cabernet, and I am all good.

green papaya salad

8 oz jicama, shredded

6 oz  green papaya, shredded

6 oz mexican papaya, shredded

9 oz picked dungeness crab (your choice of lump, claw, etc)

4 mint leaves, chiffonade

------------------------------------------------------------------------------------

juice from 2 limes

2 oz unseasoned rice wine vinegar

sugar to taste

 

combine lime juice, vinegar, sugar, salt 

toss jicama, mint, and both papaya. use dressing as desired

Ahi tartare

 

8-12 oz of ahi, 1/4 x 1/1/4 diced

1 scallion, finely sliced

2 tbs minced cilantro

toasted sesame oil to taste

finishing salt to taste

ground ginger to taste

(if you want a little kick, use a small amount of sambal oelek)

 

find a somewhat firm avocado.  1/8 - 1/4" dice

toss with small amount of lime juice and finishing salt

 

fry won ton skins

unagi sauce:

juice of 1 lemon, 1 lime, 1 orange.

4-8 oz of soy

2-4 oz br sugar

reduce until syrupy. let sit, cool in fridge.

 

i have molds.... pack bottom 1/2 with avocado. top half with ahi.  serve on won ton skin. drizzle with unagi sauce

2 of my 4 dishes had cilantro. 

 

but yes, I would mix it into mrs breast milk though curry would be better

I cant afford your food...so for me its bag o greens from aldi's with ranch.

 

Gortons fish sticks and sauce de tartar

 

Key lime low fat yogurt on a graham cracker

You don't seem to know anything about a good cab and a stellar dark chocolate as a dessert after a lighter but very full flavored spicy meal then. Too bad for you. I love grilled cheese and key lime pie too, but sometimes it's nice to pair things up that work in unison as they progress through the courses til the end.
