I enjoy most varietal... gravitate towards whites: rhone, Alsatian/Germany riesling and pinot blanc, gruner veltiner, vermetino, verdiccio, arneis, burgundian chard (like them all with different food) reds: right bank bordeaux, bodreaux, barolo, nebbiolo, brunello, zin/primitivo, rioja, cab franc, petite verdot, petite syarah. do not love many california sauv blanc (grapefruit), or red rhone (black pepper)...though many are fantastic. Wife and I had a beautiful buttery chardonnay in Australia but it was a boutique winery that doesn't sell to the US; I wouldn't know how to find such a wine here. But when you do a tasting at a Finger Lakes winery, the 2016 may be 2.3% residual sugars and the 2017 may be 0.5%. Stag's Leap came up with Hawk Crest as their lower end version and it was decent. Then Decoy came out from Duckhorn and it was really good.
