We get like 130 pounds of meats for xmas...what else can you do?

Picked up some thick NY strips on the way home and did the Reverse Sear method with them. Pretty focking good.

very standard practice to thaw under cold running water.... but once thawed you do not want it out more than 4 hours

I buy a half a beef at a time.  Freeze all of it.  It's fine.

What is a "nice steak"?  Is it thawed at the end of 11 hours or was it thawed after 4?  Probably depends on the temperature in the sink.

But I know people who thaw steaks/ground beef on the counter, all day long - then come home to cook it.......They're still kicking. :dunno:

I prefer to eat freshly cut steaks that haven't been frozen.  But, you don't really have that choice when you buy a 1/4 or half side from a local farmer.  Anyway, the local guy's frozen stuff is still better  than most of the fresh stuff I've bought at grocery stores.

The steak sat out for a few extra hours.  Dont be a biitch.  Its fine.
