To be cooked over lump charcoal. 

Rub

Pork Injection

The Rest of the Ingredients

Instructions

Pre Cook

  • Mix all injection ingredients together and then Inject pork shoulder evenly with injection solution.
  • Apply a generous amount of rub onto meat. Pat so the rub will adhere.

The Cook

  • Place in a smoker and cook with indirect heat for 8 hours on 300°F. Serve with sauce on the side or paint shoulder with sauce the last 20 minutes of cooking. When done, the pork should pull off the bones easily. The internal temperature of the pork should reach at least 195°F.
  • Because you are cooking to temperature and not time that you use a professional Barbecue Thermometer like the ThermoWorks BlueDot or for the BBQ enthusiast the ThermoWorks Signals. Links are above in the Cooking Tools section.

Going to friend’s so not sure what they are grilling. 
 

we are bringing:

cheese plate

salad: raspberries, blueberries, goat cheese crumbles, candied pecans, raspberry vinaigrette 

Mixed berry crumble and key lime cheesecake

white sangria

dark and stormies

Doing an outdoor fish, shrimp and chicken fry with the new Bayou Classic fryer.  
 

I wanna quadruple down on the cholesterol by adding some french fries.  Any suggestions on a decent frozen french fry that’s good for a deep fryer?

Just had a burger and a brat 

amazing!

I'm not sure what they do to their ground beef, but it's incredible.

Looking forward to a frankfurter tomorrow! The guy in line ahead of me ordered 20 of them! Yum!

Did the fry today.  Turned out decent but I need to fine tune things a bit.  
 

I think I need to move to a batter instead of a dredge for the chicken and fish.   
 

I used bread crumbs in the shrimp dredge and that worked well. 
 

The fryer gets hot in a hurry and is sorta tough to control.  There were several times when the thermostat was in the “fire hazard - turn off the gas territory.  
 

It’s also messy as hell.  Need to get some rubber mats to put under that fryer so the grease doesn’t permanently stain the patio.

I went with Ore I Da fast food fries and they turned out great.   Better than McDonalds actually.  And that’s saying something.
