The Nacho thread

Recommended Posts

Queso or melted shredded cheese? What kind of cheese? Refrieds, whole beans or nada?

 

Toppings? about the only thing that will make me shoot you is lettuce on nachos. F*** off that noise.

 

Other toppings? Meats? 

 

Oh and go stuff those blue corn or red corn chips. I don't care if they're supposed to taste the same. Stop it.

 

Last: individually made nachos or just a pile of chips and stuff on top?

At home:

Melted shredded, the generic frozen Mexican/taco cheese. Refried in the taco meat.

Toppings: Black and green Olives.

Chips: Doritos, or Tostitos scoops.

Individual scoops, pile of Doritos.

Dip: A mix of sour cream, salsa, and Fritos Jalapeno Cheddar dip.

See, for me it's a situational thing. The only time I like that nasty fluorescent queso and pickled jalapenos is at the ballpark.

 

Otherwise, much bigger fan of shredded cheese melted in the oven, not the microwave.

I just realized  that no matter how much good stuff was on the nachos, I always was looking for the jalapeño.  So I just went with it.

shredded cheese in the bags, Tostito scoops with a diced olive on each and a dab of sour cream.  Then Tapatio over the whole thing and chives sometimes ground turkey in each scoop

and now I am making Nachos lol

TONS of Tillamook shredded cheddar, restaurant style chips, jalapenos, onions,  taco meat with green chilles, green chilli refried beans with the wifes home made salsa and guac and I'm in heaven

Organic chips (fock you they taste better), Mexican cheese blend, refried or black beans, chopped onions, diced tomatoes, taco meat, sour cream, guacamole.

13 minutes at 350 in the oven 😋 

Mostly it depends on what I’ve got though. Generally make ‘em as use taco leftovers.

Crispy, salted tortilla chips, melted cheese (not queso as it makes the chips too soggy), retried beans, and fajita beef strips. Add some Cholula all over it and we’ve got a winner. Mexican restaurant near Lackland had the BEST fajita beef nachos ever.

Melted cheese is a fools errand.  Everything is pre-made.  Queso (velveeta is fine), chili, onions, jalepenos, beans, or whatever you like.  Then put all the hot ingredients over heated chips and serve. Do NOT assemble, then bake. It turns into a mess.

Replace chips with Tator Tots

Use the Nacho Cheese Sauce

Cover tots with Cheese Sauce

Cover with Pulled Pork or Pulled Chicken

Drizzle with BBQ sauce

Top with Jalapenos

My wife loves me, so I have that. Plus melted cheese is a fools errand and nachos should be assembled and served, not assembled, baked and served.

I shred chicken from a rotisserie chicken and mix it with BBQ sauce.  Put the BBQ chicken over the chips the cover in queso and Rotell tomatoes.  Pop it in the microwave for a bit to heat it all up and it makes for a delicious snack.

That sounds good, but what I'll do is replace the chips with a medium rare ribeye steak, top with butter, salt and pepper, and serve with maybe some fries.  

Top notch nachos.  😘

We don't eat them often.

 

At home I don't want to spend a lot of time on a snack.   so, i either:

- ghetto nacho sauce (when we have it), seasoned ground beef, sliced green onion,  sliced black olives, sometimes shredded cheese, sometimes grated cotija

- everything except the nacho sauce, under the broiler to quickly melt the shredded cheese

 

as megla mentioned, "totchos" have become very popular and we will sometime order them out.

We usually have a Costco bag of tortilla chips and a messican blend of grated cheese in the house, so that is the foundation.  I like to spread the chips such that all of them get covered in cheesy goodness.  Then, leftover meat of some sort, I'm not picky.  Today for instance I might make nachos with Korean beef that my wife made a few days ago, because this thread has me craving nachos!  Nuke those three things, then add if we have:  sour cream (yes), guac (no but we may have avocados), hot sauce (yes but this meet has a flavorful enough sauce so I'll skip it).

I like tortillas with some Fritos sprinkled in, a mountain of melted cheddar cheese, tater tots and buttermilk fried chicken nuggets with lots of guac and a perfectly round scoop of sour cream on top.

It was a perfectly good thread about nachos until you decided that someone not agreeing with your way of making them was wrong and decided to tell them they "suck" at it.

Terrifico White Cheese Dip(in the deli at Sam's Club)

Shredded Chicken,refried beans,diced tomato,jalapeno slices,shredded lettuce,sour cream and salsa on the side.
