I watched Chef John Bresher make it in individual portions then freeze it. Took him like 30 min to make 20 portions.

That was one I thought I'd get some use out of. 

Effort isn’t worth the difference from store bought when doing it at home. 
 

Worth it in large batches for a restaurant.

It doesn't take a lot of time but I can see where it would be too time consuming for people who work late and get up early during the week. 

I'm usually home by 3:00 so it isn't an issue for me.

One day perhaps. I've yet to make my ultimate favorite dish: eggplant parmigiana.
