Do I bench Ryan for Peyton due to matchups? (Raiders for Manning, Panthers for Ryan, both at home)

I'd still start Matt Ryan. Peyton definitely has a juicy matchup this week; but he doesn't look 100% to me. And, right now, I don't think you can/should bench Ryan for anyone -- that offense has too much potential to put up big points any given week.
