No business runs at a continuous 100% capacity. If a brewery experiences increased demand, they can likely brew more batches with the equipment and staff they have. They won't increase staff or purchase more capital unless they are sure the demand is sustained and they want to make the investment. Conversely, a brewer is not going to immediately sell equipment if there is lower demand. Bottom line is you don't know how efficient the operations are or what capacity then run at, so it's stupid to say that if AB fires 100 people that they will just be hired by other brewers immediately.
