First thing is to trim the fat cap as close to 1/4 inch for a 15 plus lb brisket. If it's smaller, you can trim more fat before putting it on your smoker. A big issue with briskets is when it hits the "stall", semingly the internal temp won't go up from 160 or so. At that time, wrap it is wax less butcher paper and raise the smoker temp to 275. When it gets to 190, give it a jiggle test. When the brisket is done, it will jiggle. It could be done at 190 to 205, every cut is different. Once you think it's done, take it off, leave it wrapped in the butcher paper and cover it with a towel. I find it keeps the bark better than sticking it in a cooler. Serve it once the internal gets to 150. Hope this helps.

I'm doing two six- bone pork rib roasts on my old stick burner for a friend who is entertaining family tonight. I'm pulling them off at 140 degrees and by the time it takes him to get them to his house (five minutes away) they should be right at 145. I'm doing them with apple wood and post oak. I smeared them with a compound butter with salt, pepper, minced garlic, a little rosemary and a little thyme. I do these at 225 until they get to about 100 degrees internally, then crank open the vents to get the fire hot enough to get the fat crispy and browned. I've done these a few times and they're pretty damn good with a beautiful presentation. Damn, it smells good.

A really easy, effective way to help get chicken skin to not be rubbery is to add some corn starch to your dry rub. A good ratio to try is 3 parts rub to one part corn starch. The flavor isn't affected at all. Also let it sit for about an hour longer than you normally do and pat the chicken dry before putting it on your smoker. It works.

So, your original post about the DA was about her trying not to sound ghetto. What does the Biden thing have to with your original post? What was your point in posting about it? Was it that she is black and by trying to speak a certain way, she is not real? Why do you care what she sounds like? What's wrong with someone trying not to: sound ghetto"? How is her speech pattern insulting anyone? I can't for the life of me understand how the two examples are even remotely similar. Are you saying she only talks non-:ghetto" around whites? Does she go back to shuckin' and jivin' when she's around other blacks. It's crazy that you find that this is worth posting about. There has to be something deeper that you're hinting at.

Challenging elections? Like scores of failed lawsuits? Where is the line? Trying to supplant legal electors with fake electors? Pressuring state govts to toss out or find votes? Stealing voting machines? You can't really be serious, right? Would you please point out some actions of "others that have done the same thing"? What Trump and his court of advisors did was way more serious than merely challenging election results. I guess we'll now see if it was illegal.

And Congress is still going to do an investigation. In every Special Counsel investigation, there has been cooperation between both investigations. This might be the best chance to find out the truth. It is convenient that the MAGAs already have reasons to blame this investigation if it turns out to show Biden had no part in his son's actions. -

Biden starts out with 82 million legit votes in his pocket, and those are without the "incumbent" advantage bump. All he has to do is maintain status quo and he wins in a landslide again. This terrifies the right. Neither of these a$$holes are what the country needs.
