Is caviar and roe prety much the same thing?

I've had "roe" at soochi bars. yuck. Me and my Dad used to fish for trout with that stuff. Is roe pretty much the same thing? I mean fich eggs is fich eggs, right?

i was saddened when i learned our sushi bar put msg in their roe. and the salmon and shrimp are farmed too.

Roe is the scientific term for the fully ripe eggs. Caviar is the term for roe that's been processed and salted..regardless of the fish.

Nah, just read while I was doing some research on this (i mean - "working") that 'technically' - Only caviar comes from Sturgeon. - But not everyone uses that distinction. It's like the idea that 'technically' only sparkling wine from the Champagne region of France is Champange.

I always thought that caviar was eggs of sturgeon. If you had another fishes eggs, like a salmon, it would have to be denoted as "salmon caviar". As such, the only true caviar is from sturgeon.

 

I personally don't like it, but that is what my snob friends have told me in the past.

Roe is just fish eggs. A lot of fish eggs are tasty cooked. It does matter which fish eggs you eat. A Cabezon, which is the largest member of the Skulpin family off the Cali coast, has roe that could kill you. I think it is from a leathal dose of vitamin A, but I am not Googleing for info.

 

The best caviar is Beluga caviar from a strugeon in Eastern Europe. I have had it and it is quite salty and excellent chilled. You can call anything caviar, I supose. Lump fish caviar is the only one I can think of.

 

The most common fish eggs you see in a sushi bar are smelt eggs; the little orange dots you see on sushi rolls, and salmon eggs that look about the same as the bait you see at Wal-Mart.
