I marninated my bird in some garlic and herbs all night. Cooking it at 325.

 

At what point do I pull it and add some stuffing? Anyone?

you should never stuff your bird it could kill you! and in order to make the stuffing safe you have to cook the shait out of the bird it is no good all the way around. just make the stuffing on the side and don't get salmonellosis (ie. salmonella)
