BOYO, you probably need a history lesson. The Southern diet is deeply influenced by the Gullah Geechee culture. It's a staple of Southern cuisine. Make a lot from a little, it stems from slave times to when the Sherman ordered all of the farms, plantations and crops destroyed during his "Scorched Earth Campaign". Whether they owned slaves or not.
