Need rockfish recipe[s]

Went fishing today - Caught rockfish [striped bass to some of you], blues and some flounder.

 

I have some fresh rockfish, I froze the bluefish and didn't wanna wait for the flounder.

 

I need recipe help.

 

I'm thinking lemon, butter and pepper and cooking them on the grill.

 

 

Any other suggestions?

Do ya have any fresh garlic?

 

You can make a quick marinade of lemon, butter, fresh garlic, parsley, green onions, black peppercorns, maybe some white wine... if ya have some.

 

Mmmmm... my mouth is watering just thinking about it!

Honestly, your idea of lemon, butter and pepper sounds good. Just keep basting it with that while it grills.

Here is a pretty easy cajun rockfish and shrimp scampi recipe. If you don't have any shrimp, just omit it.

 

Ingredients:

 

1 1/2 cups margarine (3 Sticks)

1 teaspoon minced garlic

1 teaspoon salt

1 teaspoon cayenne pepper

1/2 teaspoon white pepper

1 teaspoon black pepper

1/2 teaspoon thyme

1 teaspoon basil

3/4 cup white wine

1/2 medium red onion sliced very thin, then chopped

1 pound peeled and deveined shrimp

1 pound rockfish fillets-skinless-sliced thin

 

In small bowl add all of the dry spices. Mix together. In medium saucepan, melt the margarine and add the garlicand dry spices. Cook until the margarine starts to bubble. Add white wine and red onion. Add rockfish and shrimp. Cook until rockfish is opaque and shrimp is pink

You can find that in the produce section usually.

 

I guess it's safe to say that you don't have a garlic press, right?

Also, fock all of this recipe shiot, go get a can of Zatarain's (sp?) creole seasoning, sprinkle it on, and grill those puppies. :pointstosky:

Season it however you like, Old Bay, creole, whatever, and put some olive oil on it (or you can use egg whites) and lightly bread it ... then you pan fry it, in just a little oil. Flip once. Medium heat.

 

Remove from pan.

 

Bring up heat. Add to pan a pat of butter, chopped shallots, and a cup of white wine, reduce for a couple minutes... and then add capers at the end. Drizzle over fish, serve, eat. Yummy.

Minced Garlic:

 

1 clove of garlic (one little teardrop section of the garlic)

1 knife

 

1. Smoosh garlic clove between counter and flat side of knife to flatten clove and split the skin

2. Take skin off.

3. Take knife and cut thin slices.

4. Take knife and cut slices perpendicularly into little cubes.

If you are trying to impress a chick:

 

Lay out foil

Cover foil in baby spinach

lay fish on spinach

squeeze lemon on fish

Toss half a stick of butter on fish.

Pour some white wine over fish (drink appropriate amount)

Dice some garlic/pour ground garlic over fish

Dice some onion/pour ground onion over fish

put artichoke hearts on fish

Sprinkle chipotles on fish

salt and pepper to taste

roll up and put on grill for ~20 min

 

If you are not trying to impress chick

slap on grill

season with old bay or something

drink 4 beers

eat

We left from Kent Island @ 6AM - Rt 8 a few miles down by the golf course.

 

Took a left going south I guess away from the Bridge.

 

Went 15 minutes or so and they were hopping with Blues too.

 

 

Went around some island and caught flounder. We were working the edge of the channel back and forth.

 

Ended up at 12:30 at Bloody Point where there was -0-.

also...frozen bluefish is the suck...gotta eat it fresh or nothing....maybe if vacuum sealed good
