Tonkatsu Ramen

Our annual Christmas tradition, home made Tonkatsu Ramen soup. This is a once a year treat because of the effort required.

 

We started Friday night at 8pm and ate our dinner at 7pm Saturday. In the past we have made our noodles as well, however this time we bought some refrigerated ramen noodles from a Japanese grocery store in Houston.

We also made 3 different tare's, which provide the flavoring and also made the eggs. The cooking of those is not pictured.

 

First, second, and third cleaning in order. You have to boil the pork bones for 5 minutes, then you take the bones out and scrub them clean and clean the pot. This is an important process in making the broth. If you do not do this the final soup will be gritty and will not taste as good.

1 Hour of cooking, you can see broth is water with very little color.

5 Hours of cooking, you can see that it is still watery after this amount of time although it is starting to become a broth.

Only one good ramen place down here in Charleston and it’s one that’s a pop up in a brewery. Hard to beat a good ramen. That’s one of the things I’m most excited to try whenever I travel to Japan. Cause they have multiple different types with difference bases and ingredients 🤤🤤🤤
