What is your failsafe beef pot roast recipe?

Maybe it's a Texas thing, but I like to smoke chuck roast too... Fired up the Weber Kettle and smoked this one the other day. If done right, basically comes out like a mini brisket - used post oak chunks for the cook.

Oh came out great, like I said - like a mini brisket. 

Salt/ground pepper/garlic.....smoked for about 4 hours at 275*'ish.....wrapped and smoked 2 more hours until hit 195* internal temp.....let rest in a cooler for an hour - sliced her up.

This is like the Reddit Pot Roast recipe.

I think that one is like 12 pepperoncinis, 1 packet au jus, 1 packet ranch.

In high school I would spend a decent amount of my summer with him. I would work about 20 hrs and he and I had a blast going to ball games and fishing. travel heavily influenced me. Loved how enmeshed culture is with food.  In adulthood, really enjoyed hosting/cooking.  Trips to Europe pushed me over the top. Felt very connected to the alps... wanted to open an inn/restaurant in Austria or Switzerland.  Found a culinary school in vail. Made the move in 01. Loved it.... cooking and skiing.
