I take whatever meat and put it in a gallon ziplock bag with olive oil and either lemon or lime juice (to cut into the meat), then add the rubs.  Our favorites from Penzeys:  Northwoods Fire Ruth Ann's Muskego Ave chicken/fish seasoning Sunny Paris Cajun BBQ 3000  The Chicago steak seasoning is phenomenal on burgers. Northwoods is great...I prefer my own mixes for most rubs though. Their Cumin and smoked paprika are always in my BBQ rubs or seasoning.  Those two, garlic, bit of salt and pepper on shrimp tonight.
