So, since everybody watches some football game on Guacamole Sunday, and this is a sort of football site, let's cover this all important topic.

 

Do you like your guac spicy or regular?

 

Sour cream? Yes or no?

 

Tomatoes?

 

Lettuce?

 

Do you even LIKE guac?

 

What do you put in yours to make it 'yours'?

The guac I make is pretty simple:

 

avacado

onion

tomato

jalapeno

cilantro

salt

lime

 

Have thought about cutting in some garlic, but haven't done this yet. Lettuce? Sour Cream? WTF?

 

The chunkier, the better. Some spice is good, but not too much to overpower the other flavors.

My thoughts:

 

 

I believe using Sour Cream in Gauc is something short of sacriledge. I guess one might do it if you're feeding a bunch of people you don't particularly care for and need to do so to add volume. If I'm making it for me or people I like, no focking way. Completely dillutes the taste.

 

Lettuce is just bullshiit. There's no place for it, but restaurants do this strictly as as filler to overcharge for the stuff.

 

Diced Tomatoes? I'm fine with them as long as there's not too many. The acidity works well with the Guac and helps with the overall cooling process.

 

Which brings us to: Gaucamole is NOT supposed to be 'spicy'. You want to make avocado dip? Fine. Put in Ranch dressing for all I care. But the whole POINT of Guac is to serve as a cooler for the OTHER spicy shiit that comes with Messican food. (For example, the peppers on nachos.)

 

Garlic is a nice touch. We have a great place here that actually brings out all the ingrdients and a mortar and pestle and grinds the guac right at your table. Fresh diced garlic really works well with the Avos. Again, all things in moderation.

 

Some very finely diced onion is permissible. Gives a nice texture twist, but not my fave by any means.

 

I'm a basics guy: Avos, Lime/Lemon juice, Onion Salt, dash of white peppa. Works for me. You don't need to "jazz it up". But many do.

 

And, Cilantro is the most overused, overportioned herb in the history of herbs. You've officially jumped the herb shark when Taco Fricking BELL serves you ubiquotously.

Ever had the preprocessed junk in a package :puke:

 

Very undeserving of the title of guacamole. More like baby food.

 

And many restaurants make it kinda bland. It's almost like they don't want to shock any white person's palate. Screw that. If I wanted to eat an avocado straight up, I'd salt/pepper it and dab some citrus on it. But I want guacamole. Cilantro is absolutely essential in guac. And fock TB, I don't give a sh!t how they jazz up their 'food', cilantro adds something to most Mexican foods, as well as Asian. Fresh spring rolls. Noodles with peanut sauce. That's some good sh!t.

i do 3-4 versions of guacamole, but these are the primary ingredients. sometimes i add a little cayenne and/or chili powder. sometimes i use cholula in there. i am not a big fan of cumin... don't use it when making it for myself. have used it when making it for the restaurant.

- Mince up a little bit of onion

- Diced tomatos

- Touch of garlic salt

- Diced Red pepper

Prolly the only thing at life that I am good at is making guac.

 

4-5 Haas avacados

2 packages of MPK foods spicy quacomole (this is the key)

1 cup (approx) sour cream

1/2 cup (approx) hot salsa

1 package of Round Table Pizza's red peppers

Pepper

 

Tasty as fock with a kicker of a spicy after taste.

Unconventional, mebbe, but absolutely delicious.

 

If you can't get the MPK Foods brand of guac. mix, don't bother with this recepie.

I have tried it with others and it just isn't as good.
