Green chile season is here again

It is that time of year.

 

Fresh green chiles are available throughout NM, CO, AZ, and W TX this time of year.

 

Not sure if they have made it to the midwest or east coast yet (I know frozen and canned are available).

 

All the grocery stores have these roasters out front where you can bring your sack, bushel, or box and they roast them for free. The smell is one of those that you look forward to every August. I wish I could send the smell through the web, it is that focking good.

 

 

 

The best chiles come from NM, especially the Hatch Valley, but Pueblo CO has put themselves on the green chile map in the last few years.

 

If you haven't tried roasted green chiles, especially fresh ones, put it on your to do list.

If I can recommend a simple Filipino recepie that I have found that I love. In general, Im not a huge fan of Filipino food, but this dish is good, and very easy.

 

Bicol Experess

 

Ingredients

 

Green chilis (hence the relevance to this thread)

Coconut milk (a 12 oz can would be plenty - and yes, milk is different from coconut water)

Garlic

Onion

Tomato

Meat of your choice (I use chicken or pork myself, but can do with beef or seafood too)

Rice

 

Dice up onion, garlic, tomato. Cut meat into bite size pieces.

 

Brown the meat. at the appropriate point in the browning process, throw in the veggies to sauté.

 

When everything is cooked, pour in the coconut milk. Slice or dice the Chilis, and throw them in there. If you want spicy, leave the ribs and seeds in. If you dont, take them out first.

 

Let simmer for 10-15 minutes. Serve over rice.

 

I love this crap. Has a kinda weird sweet spicy combo going on. I make it about once a week now.

Titans, basically green Chile stew plus coconut milk. Interesting.

Pretty much I guess.

 

I want to try it with shrimp. Maybe throw a little pineapple in there too. Make it a little more tropical.

I did not know this was a thing but looks amazing.

Oh man yea it is. First fell in love with them down in SA. Would go to HEB and they had all those green Chiles lined up. Would have some of the workers prepare them in different ways. I got a recipe for a green Chile stew thats freaking out of this world. My buddy got it from his grandma (hes a Mexican who lived in SA all his life, went into the AF, and got stationed at lackland in SA so he stayed at home and pocketed all the BAH and BAS) and he gave it to me. Its a little spicy with the green Chiles but I always add some crushed red pepper flakes in my bowl to give it a little more of a kick. Wife can barely eat cause of the spice (shes a wuss when it comes to spicy stuff) but even she loves it despite the spice.

Thats like me. I dont like heat for the sake of heat. I like heat with flavor. Habaneros are about as hot as Ill go for flavor. Anything more is just too hot I think (of course theres other Chiles I havent tried so that could change). Serranos, habaneros, green Chiles, etc all seem to have some good flavor (habaneros might be a little too spicy for some though).

Chile season started a couple weeks ago. We get hatch chiles and roast them ourselves. The smell is great.

 

We had chile reyano (sp) 2 weeks ago and I have grilled burgers/chiles twice a week since chile season began.

I havent seen any around here. I dont think we get them around here. Ill have to check other places like Publix or Whole Foods to see if I can find some but your regular grocery store around here doesnt carry them. Unlike back in Texas where they were at every single one of them (at least in SA they were).

I know a few of the growers in Hatch and they have been very aggressive with their distribution over the last several years. Most decent grocery chains will carry the frozen chiles, nice to see that the fresh chiles are also making their way outside of the Southwest and Rockies.

My buddy from CO will be sending me some hatch chiles, so I can make some CO green chile (NOT Chile Verde). Nothing better than a burrito smothered in that sh!t.

Hatch chiles from NM are a little too spicy for me, as are habaneros in general. Serrano, jalapeno, poblano all good. :thumbsup:

They sell milds for poosays like you.

 

Not sure if you are Tucson or Phoenix, but Carlsbad Tavern on Hayden is legit. Worth checking out if you are in the east valley.

 

Si Senors is a NM "chain" that has a location in Chandler, also legit.

I'm in Phoenix, closer to Chandler and I appreciate the suggestion. The definitive hatch/NM place here is Los Dos Melinos. I managed to survive lunch there recently so... that makes me more of a man apparently? :dunno:
