A little hack to make the WSM much easier to use, take the heat sheild/water pan and fill it 3/4 with playground sand and cover in foil, multiple layers of foil.  This will have the same efect as water would (you don't really need water for moister) and it makes for much easier clean up as there is no nasty water to get rid of, simply remove a layer of foil and all good for the next smoke

I ended up getting a couple of pork tenderloins at Costco.  I just need to think of a couple of "fun" sides.

 

We will do the generic chips/baked beans/fruit with our burgers and brats.

Wings on sale at Sams, picked up 2 packs and going to start off tomorrow with them on the smoker.  Going to make a batch of each

Sweet heat chili mop, Mango/Ginger/Habanero sauce and Gen Tso sauce

Should be a great weekend!!

Time for an old fashion before I start working on my baseball LUs

Skirt steak marinating- St.Style Ribs - chicken sausage - sides black bean dip, tuna Mac, potato salad, all homemade. 
Kids bringing more and dessert.

What are you marinating your skirt steak in?  I bought one to pair with a balsamic salad, but have never made one before.

We are going to a party today, so tomorrow is going to be very chill. Most likely just burgers. Maybe some corn on the Weber.

When it comes to buns though, I don’t like traditional buns, and I don’t want them plain. I will usually use a nice sourdough bread. I wil toast, spread with butter, add garlic powder and oregano. The flavor needs to be on the outside to maximize its effectiveness.

Kind of an Asian fushion. Oilive oil, soy sauce, ginger, garlic, the ingredient no one can pronounce and I sure can’t spell it - worscheier sauce LOL. Some random spices and will salt and pepper prior to the grill.

I’ll add:

Ina Garten Orzo Pasta - we take out the dill and cucumber

Ina Garten - Risotto - we take out the peas, make this more in colder weather, but this shet is amazing

My wife did this yesterday, along with grilled artichoke hearts and a homemade green goddess dressing (avocado, mint, and homemade kefir).  It was delicious.  In fact I added leftover tri tip to it for a salad for lunch today.

Main dish tomorrow is a 3.5 pound beef tenderloin we had in the freezer.  Bought it over Christmas but we had too much other food.  My local two kids and son's GF are coming over to open the pool for the season, so we should make a good dent in it.

Sides are zucchini and potatoes.  We wanted some corn on the cob but she said it didn't look good.
