A little hack to make the WSM much easier to use, take the heat sheild/water pan and fill it 3/4 with playground sand and cover in foil, multiple layers of foil. When it comes to buns though, I don’t like traditional buns, and I don’t want them plain. I will usually use a nice sourdough bread. I wil toast, spread with butter, add garlic powder and oregano. It was delicious. In fact I added leftover tri tip to it for a salad for lunch today. Main dish tomorrow is a 3.5 pound beef tenderloin we had in the freezer. Bought it over Christmas but we had too much other food. My local two kids and son's GF are coming over to open the pool for the season, so we should make a good dent in it.
