I am congratulating a grown man for de-escalting the situation in very effective way after being assaulted. Her decision to physically attack resulted in a response, and a fair one at that.

I would suggest that you have multiple avenues. And the context of the situation is relevant.

 

I think returning the punch changes the situation and really it endangers both people more than the pepper spray.

 

Had a third party resorted to conflict in kind I think they would deserve to be maced for sure, and perhaps even arrested...but not sure. Deescalation was the best possible outcome, throwing more punches is not likely the best way to deal with a violent person.
