itsbigmoni 1 Posted January 23, 2009 So with the big game comin up what are some your favorites? Maybe i'll change what i'm makin in favor of something i see on here. Burgers- I don't put too many ingredients otherwise it becomes meat loaf Meat Paprika Egg Chopped onions salt pepper Nachos- This one is really simple Chicken - I use this chicken taco seasoning thing. It comes in a packet. You semi-cook the chicken, put in a sauce pan with the seasoning and water and simmer till done. Refried Beans Cheese Olives Salsa/sour cream/jalepenos - added after you put the nacho's in the oven until the cheese is melted Wings Cook in the oven for about 30 minutes Dip in sauce consisting of Louisiana hot sauce, butter, chili powder, cayene, and tomato sauce Cook for another 10 min dip again broil for 3-5 minutes
oddball 0 Posted January 23, 2009 Sorry, wings need to be deep fried. The second the word 'oven' is used, you're doing it wrong. End of story.
Me_2006 14 Posted January 23, 2009 Chili Wings Sausage rolls (sausage and cream cheese inside crescent rolls and then sliced.) nacho-tots (tater tots with cheese, jalepenos, bacon, sour cream)
itsbigmoni 1 Posted January 23, 2009 Sorry, wings need to be deep fried. The second the word 'oven' is used, you're doing it wrong. End of story. I know its blasphemy, but in general i don't like fried food. I'm not a fan of breading on my wings either. I know i know oven isn't the right way to do it, but these turn out really good. Unless you have wings all the time, you probably wouldn't be able to tell. Edit: This also lets the hot sauce really set in which i like. When its just dipped, to me its like chicken fingers. Why couldn't i just dip chicken nuggets into the sauce and call it wings? Also, since i have the ghey, i also like how they're a bit cleaner.
Let Da Big Dog Eat 37 Posted January 23, 2009 Also, since i have the ghey, i also like how they're a bit cleaner. Can't argue that point, well, the ghey part anyway. ANY SB menu that does not include home made semi-spicy Guac is a failure.

There was a bar in Southern New Jersey(Alexanders/Vineland, NJ) that oven roasted their wings with a dry rub. Fantastic wings. One suggestion I have is to soak them overnight in buttermilk before you cook them.
buffalobillsffl2003 0 Posted January 23, 2009 deep frying the wings and then throwing them on the grill for a bit isn't bad...liberal amt. of bbq sauce...but if it's 10 degrees outside, not many people will want to bother with that.

oddball 0 Posted January 23, 2009 What does the butter milk do? I don't know the science or the chef expertise, but buttermilk does something special to chicken. Look around on the net. Google it. I've used buttermilk and can attest to it's wonderfulness.

We call it Buffalo Chicken caserole, very good stuff smoke 2lbs of boneless/skinless chicken breast till done, let cool and shred. Soak chicken in hot sauce (we use Tex Pete) for at least 1 hour in a caselrole dish in a sauce pan heat 8oz of cream cheese to soften and once soft add 1.5 cups of Ranch dressing stir and then add to chicken and stir, cover with shredded cheese ( I use colby jack and sharp cheddar) Pre-heat oven to 350 and then bake for @ 45 minutes Serve with chips

wiffleball 4,648 Posted January 23, 2009 We have a local bbq place here that smokes their wings in with their ribs and other meats, damn good. Yeah, that's damn tasty. We had a place that did grilled wings. A bit larger than the grizzled up POS that bars routinely deep-fry to death.
wiffleball 4,648 Posted January 23, 2009 Another thing i don't like is guacamole. What does the butter milk do? Soaking the chicken in Buttermilk tenderizes the meat of the chicken through the usage of protein enzymes activated that occur naturally in the buttermilk, which breakdown (tenderize)the cellular walls of the chicken meat itself. Similar to a common meat tenderizer you would use to tenderize a pot roast. The buttermilks natural flavor also imparts a unique taste to the chicken. These are two reasons why people have been soaking chicken in buttermilk for many, many years in the Southern Regions of America

When marinating steaks I use a whole bottle of Lea & Perrins(has more spice for my tastes) a whole onion, garlic salt,a few tablespoons of Robusto Italian Dressing and mushrooms. After letting the steaks soak for 24 hours or more I take all the excess marinade and put in a sauce pan on low heat until the onions get done, then use as a side or a topper on the steak.
