Oooohhh. You have redeemed yourself for the oyster stuffing. I have no idea what goes into creole mac and cheese, being from the Nort'. But it sounds spectacular. And unlike most northerners, I have a definite affinity for SoCo and Nawlins style slushy drinks.

HERE WE GO! I was mainly wondering what kind of meat would be best in it; was thinking andouille, shrimp or lobster. I ain't from the south, but can't get enough cajun/creole food. What about the cheese?

 My mom made it every thanksgiving and Christmas. She would put turkey liver chopped up and also in her gravy. No better leftover than cold cornbread stuffing, gravy, white bunny bread, and mayo, with a touch true mash potatoes. I think about it every thanksgiving.
