The farm raised ones dont have as much flavor. Still ways to make it good (as Im sure youre more well aware than anyone here). I have eaten Hungarian partridge, pheasant, blue grouse, chukar, rough grouse, sharptail grouse, Canadian geese, snow geese, wild turkey, and at least 10 subspecies of duck including, but not limited to: mallards, teal, canvasback, golden eye, bufflehead, scaup, redhead, wood, etc. Wild bird is alright, but all of my hunting buddies agreed that domestic bird is just as good as 80% of the wild bird. 10% of wild bird is bad, merganser, scaup, etc. 10% of wild bird is great, Hungarian partridge... 80% is average. Wild turkey is not better than domestic, for one they are tiny and you cannot cook them the same way. It's true. The only part of a deer that tastes really good is the backstrap. The rest of it has to be combined with other meats or drenched with seasoning. Don't tell anyone though. Dog didnt know what the heck to do since shes trained for duck hunting so she would scare the pheasants up in the air too soon.
