Steakhouses actually bring in higher quality meat and often place a high priority on how they treat it (wet and dry aging), and have a huge disparity inhow they invest in labor to ensure proper technique. Steaks from sizzler and outback are not going to match a Peter Luger or Smith & wolinsky. While terribly inflated, I am sometimes in a position to go to one of them. Never a bad meal. While you seem to believe that they are interchangeable (along with wine choices), people with moderate food knowledge do know the difference. At a fancy place you are more likely to praise the superb quality of meat and wine due to the ambiance and price. Even if it’s just me swapping your meal for outback and two buck chuck wine. Our brains can’t help it. The quality to price does not scale well. So I won’t pay 100 for a steak that’s marginally better (more butter is all they are doing different) than a decent cut at outback. You're out of your mind if you think you could pass off sizzler steak as Morton's, Del Frisco's or any of the other top notch steak houses around the country.
