I actually like when they up the malt and or other sweetness to balance it out. I was just at this place during my vacation last week: https://www.pinetopbeer.com/tasting-room Note that practically every beer is over 6%. This is one thing I don't get about the IPA haters -- the alcohol content can be 2X or more over American session beers. If that's ghey, I don't want to be straight. Note also that a lot of their beers are based on Belgian styles (dubbel/tripel/abbot (quad)). I tried them all including the Grand Cru, and my favorite was the Tripel Houblon IPA, which took a typically sweet tripel and balanced it out with an IPA level of hops. Also 8.7% alcohol.
