I shop at Penzey's all the time. :thumbsup:

I love their dry rubs. I take whatever meat and put it in a gallon ziplock bag with olive oil and either lemon or lime juice (to cut into the meat), then add the rubs.

 

Our favorites from Penzeys:

 

Northwoods Fire

Ruth Ann's Muskego Ave chicken/fish seasoning

Sunny Paris

Cajun

BBQ 3000

 

The Chicago steak seasoning is phenomenal on burgers.

I'm lazy. I'm partial to Montreal Seasoning.

 

It's ok, but you need to try the Chicago Steak seasoning. :thumbsup:

Can we all agree that all that a steak needs is S&P?

 

You can add whatever you want but a good piece of beef, when prepared correctly, only needs S&P to taste it's best.

You can add whatever you want but a good piece of beef, when prepared correctly, only needs S&P to taste it's best.

You are 100% correct.

 

I like to then give it a liitle bit of olive oil to help with the sear.

No. While I agree S&P are the 2 essentials and a steak will taste good with only those seasonings, I believe there are other additions to make it better. IMO

No. While I agree S&P are the 2 essentials and a steak will taste good with only those seasonings, I believe there are other additions to make it better. IMO

That was my point though.

 

A little erl, some salt and pepper. A steak doesn't need anything else if you cook it properly.

 

You can roon it with whatever you want after that.

Give the Southwest and the Galena Street rubs a try, these along with the Cajun are the ones I use the most both personally and professionally.

 

Also they have a great selection of pepper corns.

 

Also Also, their Italian herb seasoning is good

Salting was around long before AB and is still a very good way to tenderize lower cost cuts of meat.

Salting was around long before AB and is still a very good way to tenderize lower cost cuts of meat.

No, he was basically the one who led the charge over at Food Network that somehow 8 grams of salt on a 22 ounce steak would some how suck all the moisture out of the meat and make it dry.

 

All the Food Network people tend to drink the same Kool-Aid and follow the same ridiculous trends. And, at the time Alton Brown was deemed as some sort of Genius food scientist. Frankly, he was a crackpot who over-engineered and over thought and under delivered on just about everything..

 

He was fun to watch, but so much of his shiit was just ridiculous.

 

That's why he has been relegated to game show host versus actual cooking.

Guys who think there's only one way to apply heat to a protein and only one possible seasoning mix and everything else is crap are a lot like the guys who want to tell you how to play Blackjack in Vegas using your own chips.

 

F*** it. If you like it, f*** everybody else. If you want to throw out tips you like, fine thank you. But don't go wandering around saying there's one true way to grill a f****** steak for Christ's sake.

Guccing steaks has been around for years, long before AB , he may have brought it to light to the un-educated masses but Chefs have been using salt pre-cook for 75+ years

Not a big fan of steak seasonings... My grill gets upwards of 800* and most commercial steak seasonings tend to be too coarse - usually end up burning on my meats more than flavoring them.

Oh for sure.. Most think of lime juice when doing them, and it's great for sure.. But I suggest trying orange juice too - it's fantastic as a marinade base.

If you are a tortilla chips fan then get some corn tortillas and cut them into quarters, fry them in some veg oil and then salt and season with the Southwest, to die for. Also can be used as the Mexican spice you were asking for earlier, very good in a chili verde

 

The Galena St is a bit spicy but is really good on any pork or poultry.

Galena Street Seasoning is the bomb. I can't stop tasting it. I've used up a quarter of the jar just putting a little on my hand and licking it off. Absolutely love the stuff. 10/10

These are excellent seasonings. In SA I used to go to this meat market all the time cause they had the best steaks, brisket, sausage, etc. Used this seasoning and found out they own the seasoning as well. They have a ton of different ones too

I'm not a fan of pellet smokers and for that price, um heck no.

I will say having a grill/searer is a nice adition .

 

For that money I'd suggest getting a WSM 22.5 and saving $500 , but if you are into setting it and forgetting it I can understand going the pellet smoker way.

I live about an hour frim Penzeys in pittsburgh. I think Ill take a drive down there next week and pick up a list similar. I need some good 5-spice as well.
