For Etoufee, gumbo, jambalaya I like old school Tabasco. Asian I like Sriracha. I like Cholula for other things. But like others were saying, yea I'm not a fan of the sauce being nothin but heat. If there's no flavor to it then it's worthless. Might as well just put pure capsaicin on your food.
