From watching too much food network shows, I think it's a combination of the salt and texture it adds to the meal. Probably the reason why I find a sandwich made with toast(even I toasted it hours earlier) tastier than just a regular sammy---like the crunch factor. I'd need to google on the relish, I tend not to do it because of the pickles. I also have seen jalapenos subbed for pickles here, but I prefer the pickles. To me it is pickles, onions, tomatoes, mustard, and celery salt. First time I had one was in Little Rock AR of all places. There is a hipster dog place downtown. I hadn't really used mustard to that point, and I by and large don't like raw onions. But it caught my eye and I had heard of them so wtf let's try it... I freaking loved it.
