In very fine print on the menu that they don't provide: "A 5% kitchen appreciation fee will be added to all checks." This just pissed me off on principle. So... 1. " what if I don't order food? Tab still subject to that 5% fee?" 2." Why don't you just gross your food items up by 5% and pay your kitchen staff that incremental amount each night at tip out?" 3. " I mean, that's what it is right? Forced tip? You guys are giving your kitchen staff that appreciation fee right? Or is it just additional profits?" 4. "How do we know that fee is being distributed to the kitchen staff in the first place? So, I don't mind giving 5% extra to the kitchen staff. Just let me do it directly. Okay?" I used to work for utilities and telecoms. I'm keenly aware that line item b*******. But it gets ridiculous. We all know about overhead. That's exactly what I'm saying. By the way, I know their dishwashers make 15 bucks an hour, so I don't think their kitchen is working for less than minimum. Maybe their wait staff. You constantly see this stuff with durable goods, every year they cut another corner here and go with a cheap replacement there until it’s just a poor copy of what it used to be. Clothing, appliances, electronics, furniture, household goods etc. 2. Add on bullsh1t fees and whatnot. That’s what you’ve been seeing with restaurants and stuff and of course the telecoms and so forth have been doing this for a long, long time. 3. Go ”upscale” and just charge a big price. It’s actually not even upscale, it’s just what used to be the norm and is now too expensive. Inattentive, couldn't get anything right. I'd ask for one thing, he would eventually bring something different.... The bus boy OTOH was great! Always coming by to see if we needed more water or bread or anything. When the appetizers were finished he was right there to clean off the table. Same when the main was finished. When we were done, the server got the absolute minimum gratuity. I think I gave him like $5 on a $100 tab. I chased the bus boy down and gave him $20 and told him put it in his pocket. When I receive exceptional service, when an employee goes above and beyond to ensure I have a good experience, I love giving them a good tip. Here in China, tipping isn't a thing. At all. They often get offended if you do. The only exception is hookers, as I guess they're well past being offended. I don't like that either.
