Thanksgiving 2017

Happy turkey day!

 

hosting this year... my parents, mrs' mother, a few other friends...about 12 of us.

 

parents requested items below. still thinking about the turkey... i want to do something a little different than years past. also doing a sweet potato casserole with streusel topping. will post later.

 

 

stuffing:
1 lb- unseasoned pork sausage (crumbled) you also want to remove the casings
1/2 C- finely chopped onion
1/2 C- finely chopped celery
1/2 C- butter
1 C- finely chopped unpeeled mcintosh apples
1 C- dried cherries
1/3 C- cherry brandy
1 loaf- french baguette cubed
1/4 tsp- cinnamon
1/4 tsp- mace
1 tsp- salt
1/4 tsp- ground black pepper
1-2 C- chicken broth
pinch nutmeg
pinch dreid sage
pinch dried thyme


brown sausage. saute onions and celery until soft. combine all ingredients. you might want to use an egg to bind.......

spray dish you are going to use to cook. spread stuffing evenly in dish. bake at 425 for 30 min (or unitl golden brown). cover with foil (to prevent burning). lower temp to 350. cook another 20 min until internal temp reaches 150.



soup:
1 butternut squash
2 green apples
5 C veg stock
2 C cream
1-2 oz maple syrup
1-2 tbs cinnamon
1 tsp nutmeg
s&p to taste


preheat oven to 425* cut squash in half (lengthwise). put on cookie sheet seed side up. lightly coat with oil. roast for about 45 min to 1 hr until pulp is soft. bring stock to boil. turn heat down and let it simmer. scald cream. set cream aside. peel and core apples. cut into wedges. roast for about 20-30 min (until lightly brown).

when squash is ready, let cool enough so you can handle it.... scoop seeds out and either discard or set aside to roast another time. scoop pulp out (you don't want that outer layer). put pulp and green apple in stock.... simmer for about 20-30 min. puree. once smooth, add cream (while blending)..... then add maple cin, nutmeg, s&p.

Cranberries:

1 lb cranberries (fresh or frz)

1 c orange juice

1/2 c dark rum

2 cinnamon sticks

2 tbs br sugar

 

throw in pot over med-low heat and reduce until syrupy.

Thanksgiving is the 1 meal a year I don't have to cook.. Long as I get a wing, a leg and some cream peas - I'm good.

 

This soup sounds good, will have to try. :thumbsup:

Dressing. Stuffing goes in the bird. My FIL used to spend hours making dressing. It was awesome.

 

 

i like mine a little crispy...if making in the bird, i pull it out. put it in a baking pan and finish in the oven

Crispy is best. You can't do crispy in the bird.

 

I think I'll do dressing, but instead of the unseasoned pork sausage, I'll stop by the bodega and get some chorizo. What ingredients would go well with that?

i think cornbread goes well with chorizo..... apple and/or raisin, diced peppers, chipotle, diced onion or sliced leeks

If Mexican - be careful, will be greasy.

Haven't done tgiving since 2013. Used to go to Irvine at pop's for it. Now venturing too far is too much. Bff lives 10 min away and will do a little diiner, I'll take pie. I've never been big on holidays. There are a ton of fam gatherings a year if I want delicious food..

Yeah, we won't do the soup for T-day, but definitely want to try it :cheers:

So, my middle daughter is vegan. This makes Thanksgiving challenging. She is pushing us to use "vegan butter," which appears to be margarine with no animal fats. She claims it tastes "exactly like butter$#@!" :rolleyes:

 

Anyway, anyone ever try something like Earth Balance vegan "butter"?

I won't see a human being all day on Thanksgiving. Wife and kid at in-laws, while I'm dog-sitting for parents in the middle of nowhere.

That's what wife asked.... don't know - hamburger and beer I spose. Won't be the best Thanksgiving feast ever, but relaxing on the lake all day. My groundhound day awaits!

I did that about 3 years ago for Christmas.

 

24th - dinner with the family

26th - day with gf who had been with her family for a couple of days (I didn't have to go)

25th - did a little work, then ate leftovers, drank beer, and watched football

 

It. Was. Awesome.

Isnt unseasoned pork sausage just ground pork?

 

I want to make that stuffing but some of them ingredients i dont know if I can get at my local walmart

mild italian sausage or ground pork. get what is available. what do you think will be hard to find?

there are cherry flavored craisins that work fine (most dried berries would fill in). even go craisin or raisin if there is nothing else.

Yeah, just me, a Peace Corp volunteer at the local university, and a guy that teaches at a high school. There's a smattering of other foreigners, no more than a dozen.

Gawd...My father, mother and sister in law are vegan. This holiday is by far the worst for vegans and I wish they could just suspend this for one frickin day. Worst part is the sis in law is hosting. Get ready for a whole bunch of fake foods like vegan cheesecake--oh YUM!! It tastes like the real thing(which by the way it never EVER does)........

 

Gonna suck. We are making a turkey, will carve it at home, take some there and leave the rest at our house to eat later. Lame.

I usually use Smart Balance but I think thats just low in cholesterol and fats. Not sure if its made by the same company or not. I guarantee the slop that she likes tastes nothing like butter.

 

And a lot of you fockers take your meals for thanksgiving too damn seriously. Just have turkey and mashed like normal people for Christs sakes.
