Steaks: Sauce or No Sauce

Recommended Posts

A good steak is best without sauce to saviour the meat and it's own juice. But a shitty cheap one, then any sauce would be better..

This was my line of thinking until I had a peppercorn crusted steak with a wine Demi glaze port reduction. That glaze totally made the steak

I love steak too much to risk it. If I can't have sauce on the side to try first, it's a no go---unless who I'm with orders it then I'll try it! :D

Peterlugers cracks me up. They go to all the trouble to make a homemade steak sauce. And then they strongly advise you not to try it on their steak. Rather, you're supposed to order their thick cut bacon and tomato salad And use the steak sauce on that.

A1 fan but really butter is a great steak topper. A nice compound garlic butter and salt/pep.

That's a different story. Part of the recipe. Adding a steak sauce (or Heavan forbid ketchup) would truly be a sin.

Not a "sauce" but I will occasionally top with a roasted garlic aioli if more flavor is necessary

Closest thing to a sauce that I would like to put on a steak Is chimichurri sauce. That goes really well on Some of the more difficult Cuts Like a skirt steak.

I personally prefer a compound butter. But if a lesser cut, don't mind Hienz 57.

 

But nobody who drowns their bbq in sauce (kc people) should ever make fun of anyone who uses steak sauce, even on prime cuts.

I have enjoyed steak minus sauce, with a peppercorn sauce, with A-1 etc. but ketchup on a steak is barbaric. :nono:

i am black and never in my entire life have i ever seen anyone put ketchup on a steak!!

(except philly cheese steak sandwich)

it's certainly NOT a black thing. a sincere slap to you sir!!

the only sauce i've ever seen put on steak is A1 and Lea and Perrins on lamb.

Since it has been mentioned, I don't understand steak Au Poivre And or steak with peppercorns In the sauce.

 

Are you supposed to eat the peppercorns? Because, if so, after you eat the first one, Your palate is completely ruined the rest of the night. After biting into a pepper corn, You could serve me days old Muskrat Roadkill And I couldn't be able to tell the difference.

 

 

Or, are you supposed to spit them on the floor? In which case, couldn't they just Strain that s*** Before they put it on the steak?

I do not use ketchup on anything any more. It is about the worst condiment for any situation. Anything ketchup could go on, BBQ sauce would be better.

IMO; "sauce" should only be a "marinade" for cuts that are not as tender - you marinate for 24-48 hrs. to break down or tenderize tougher pieces - like London Broil Shoulder Steak, or Flap Meat Sirloin Tips.

These cuts are plenty flavorful once they are tenderized.

More expensive cuts are already tender enough and don't need any "sauce"
