Favorite soup?

long list... but here are my favorites:

French Onion

Tom Kha

sizzling rice

lobster or crab bisque

cream of mushroom (mushroom bisque)

butternut squash

chicken tortilla

gazpacho

jambalaya/gumbo

The wife made a soup yesterday with a red kuri squash that was quite tasty.

That being said, I'd probably put

french onion

seafood bisque/NE clam chowder (yeah I combined them, close enough, sue me)

cream of mushroom

tomato (w/grilled cheese)

on my Mount Rushmore.

Chicken Noodle - my wife has a fantastic recipe.  The key is to use the frozen egg noodles.

White Chicken Chili - it's a soup, despite its name.  The hotter the chilies in it the better.  A nice dollop of sour cream does it good!

Chicken And Wild Rice - I wouldn't be a Minnesotan without loving a good wild rice based soup.

Thai soup. Tom Yum. Either with shrimp as protein or had it with small pork dumplings that’s even better. Yum. No pun intended.

the one i make is usually for thanksgiving (at mom's request).. listed in my thanksgiving threads.

roasted apple/butternut squash

 

I have a hard time having soup when it is warm out.  we just started getting some rain, but it still feels like summer here.  

last year we started making soups/stews/chili on sundays for the week. we might be getting close to starting up again 👍

How do you differentiate soup vs. stew?  My wife used to make an awesome chicken cheddar chowder on the regular; in my mind it is more of a stew because of a large amount of chicken and veggies (and cheese) vs. liquid.  Or, is "stew" when you cook the meat in the liquid?

Regardless, I told her about this thread, and she is going to reprise her chowder as it gets cooler.  :cheers:

Stews are typically made to break down proteins (often tougher cuts of meat). not so for seafood stews as it does not take a lot of time to cook seafood... less liquid, more "chunky," braising

 

soups are more generalized and are really just extracting flavor from the ingredients.. more liquid, often thinner (not always- some chowders and potato soups), usually requires less time

Def green but ones with ham don’t taste like peas at all. Very hearty and super good.

 You can go to your local butcher shop and get ham hocks to put in it which adds great flavor. We have a Honeybaked Ham here that has the best. A must.

Yep. I never liked the sound of Split Pea until one time home for Holidays and my Mom had done just that. Ever since then I make this a couple times a year. Delicious.
