Do you like meatloaf? (Not the artist, the food)

Seems that we love it or hate it. Or we grew up with it being just a nasty food and is now delicious. 

I usually make mine with ground turkey, not super lean and not the full fat kind, somewhere in the middle. 

I think it's almost a comfort food; meatloaf, mashed potatoes, etc.

I like to make a turkey meatloaf with ground turkey and leftover stuffing after Thanksgiving.

My mom made it delicious when I was growing up. No turkey in meatloaf. Just a waste.

I like both the dish and the musical group! 
Please post a good recipe. I find that whenever I make it, I don't want it taste like a juicy hamburger.

What a coincidence! We're having meatloaf for dinner today. My sauce is a mixture of ketchup, worcestershire sauce and red-wine vinegar with a brown-sugar cube in it. I use a sweet onion grown locally. The red-clay soil around here makes the onions super sweet. I also use Italian bread crumbs.

I’d say carrots instead of bell pepper but both good…agreed on the very finely diced.

1 c ketchup

1 tbs kosher salt

1 tsp freshly ground black pepper

1 tbs soy sauce

i've done a lot of variations of this:

bbq: add 1-2 c bbq sauce instead of ketchup and 1 c of either gouda or cheddar

italian: use 2 lbs beef, 1 lb ground pork. add 1-2 c of marinara instead of ketchup. add 1 tbs of rosemary, 1 of thyme, 1 tsp of fennel. finish with slices of mozz or provolone

messican: use salsa instead of ketchup, cumin, chili powder. chipotles. cilantro, 1-2 peeled, diced jalapenos, diced tomato

asian: hoisin instead of ketchup; cilantro. chopped peanuts, green onion

I grew up hating it.  I have a anti-Ketchup ick.    But, now I have grown to like it.    Meatloaf (still anti-ketchup)

some other asian variations:

- sweet and sour: use either a homemade or store bought sweet and sour sauce, small diced red green and yellow peppers, small diced onion, small chunks of pineapple.

 

- could use a peanut sauce... i know i've posted a peanut sauce in here somewhere.

 

- could go with oyster sauce.

 

- teriyaki: pick your fav teriyaki sauce, green onion, pineapple chunks

 

 

when i was about ten, i used to make burgers with oyster sauce, sometimes soy, sometimes sweet and sour, and sometimes teriyaki (still make these).

Living in firehouses, I’ve had meatloaf most ways you can imagine.  It’s a staple.  Oct-March, it’s prob cooked once a month.  The best I’ve had(mine) is ground beef with chopped peppers and onions and a touch of tomato sauce, Lawrys, eggs, eye-talian bread crumbs, W sauce, etc. Another good one is ground turkey with stove top in place of bread crumbs.  Cracker Barrel meatloaf on a winter day is hard to beat too.

My mom would make it occassionally.  It was decent but I would prefer the ground beef to be used otherwise.  I suoppose it was a good change of pace.  She made hers with Open pit BBQ sauce on the top.  I don't think I have seen Open Pit in the stores in decades.  I don't know if it even still exists or maybe it has morphed into a product by another name.

 

I do seem to recall my mom mixing a bit of Chex Wheat cereal in with her breadcrumbs when she made this

I love meat. I make a meatloaf sammich and pour my thick gravy with mash potatoes and put it on Texas garlic toast. Makes for great flatulence.

Hated it growing up, but like it now. My mother, RIP, was a saint of a woman, but not the patron saint of cooking. She used no spice, so I learned to salt the crap out of everything.

Now, it's a good comfort food with mashed taters and slathered with gravy.

One of my fav restaurants(across the street from a great brewery) has the best meatloaf I've ever had:

Farmhouse Meatloaf          
Tenderloin, brisket, pork belly • Whipped Yukon’s • Broccolini • Wild mushroom Demi glacé • Crispy Poached egg • 27
