The only time I like that nasty fluorescent queso and pickled jalapenos is at the ballpark. Otherwise, much bigger fan of shredded cheese melted in the oven, not the microwave. Hawkeye21 1,855 Posted July 7, 2020 I shred chicken from a rotisserie chicken and mix it with BBQ sauce. Put the BBQ chicken over the chips the cover in queso and Rotell tomatoes. At home I don't want to spend a lot of time on a snack. so, i either: - ghetto nacho sauce (when we have it), seasoned ground beef, sliced green onion, sliced black olives, sometimes shredded cheese, sometimes grated cotija - everything except the nacho sauce, under the broiler to quickly melt the shredded cheese as megla mentioned, "totchos" have become very popular and we will sometime order them out. I like to spread the chips such that all of them get covered in cheesy goodness. Then, leftover meat of some sort, I'm not picky. Today for instance I might make nachos with Korean beef that my wife made a few days ago, because this thread has me craving nachos! Nuke those three things, then add if we have: sour cream (yes), guac (no but we may have avocados), hot sauce (yes but this meet has a flavorful enough sauce so I'll skip it).
