Grilled chicken sandwich. Delicious.  Baked beans on the side.

Had your mom for lunch, but I think that we are having burgers and dogs here as it is fairly decent weather to grill out.

It's dry and scaly, but not a desert.  🤮

I told the little woman to make something that I like.  She'll do it if she knows what's good for her.

Got some really good chicken skewers from Costco.  That and rice is the plan.

Some sort of beef stew in the crockpot.  I think I've mentioned that we've been getting meat from Butcher Box and have been really pleased; grass fed, tends to be leaner but still very flavorful.  Every month we get different cuts of beef and pork (and we paid a one-time small fee for lifetime chicken thighs and drumsticks).  The beef can be ribeye, tips, ground... or in this case, "stew meat."  I don't know if that is a cut; seems like what was lying on the butcher's floor.  Anyway, we've had at least one stew with it before and it was tasty.  I'm not sure what is in this one; I saw potatoes go in, as well as a powder which I believe is a thickening agent.  I'm sure there are veggies and spices.

Those chicken skewers are awesome. My wife bought some from BJ’s. Don’t compare.

Typically the best cuts for stew are chuck/round

Thanks!  Talked to Mrs. JK, she said it has sweet potatoes vs. potatoes, also green onions.  Broth is OJ based, although she didn't have enough, so she winged it with some extra zest and some orange extract and sugar to make up for it.  Just snuck a taste of the broth, tastes good.

We did fajitas.  Marinated chicken breast, 3 types of peppers, white onion, and all the fixings.  I like to also crush up some tortilla chips inside, to get a little crunch.

On a sort of related note:

Grabbed a sack lunch from a pile whilst doing the stimulus thing.  Ugh, Peanut Butter.   But whatever, I'm easy.

So, I chop up some included banana and sprinkle some fritos on just to jazz it up.

As I did, I see what I think are possibly strips of green onion?

Turns out, the sammich wasn't PB, it was spicy pinto bean hummus.

..and banana, fritos and peppers. on stale white bread.

Interesting.

Dang, that looks yummy!

Our stew turned out good as well.  Just served it with bread and a side salad.

Not gonna lie it's pretty good. The trick is to not overcook the shrimp

It's amazing how fast the IP cooks.  I make hard boiled eggs in a 4 minute cooking timer (takes a few minutes to heat up); the trick is to remove them immediately upon completion and put them in ice water.  Perfectly cooked and peel with no effort.

This whole quarantine I've been getting into smoking meats (mmmm...sounds hot)

Bought a Rec Tec awhile back so last night we had smoked pork chops and bacon wrapped chicken.  Pretty interesting thing to learn, makes some delicious food.

Did that last night on the grill.  Grilled some squash, zuchini and peppers too.  It was 74 here before it started raining.

You could always throw a can of beans on or bake some tater tots.

I'll probably make spaghetti tonight.
