I think I've mentioned that we've been getting meat from Butcher Box and have been really pleased; grass fed, tends to be leaner but still very flavorful. Every month we get different cuts of beef and pork (and we paid a one-time small fee for lifetime chicken thighs and drumsticks). The beef can be ribeye, tips, ground... or in this case, "stew meat." I don't know if that is a cut; seems like what was lying on the butcher's floor. Anyway, we've had at least one stew with it before and it was tasty. I'm not sure what is in this one; I saw potatoes go in, as well as a powder which I believe is a thickening agent. I'm sure there are veggies and spices. Talked to Mrs. JK, she said it has sweet potatoes vs. potatoes, also green onions. Broth is OJ based, although she didn't have enough, so she winged it with some extra zest and some orange extract and sugar to make up for it. So, I chop up some included banana and sprinkle some fritos on just to jazz it up. As I did, I see what I think are possibly strips of green onion? I make hard boiled eggs in a 4 minute cooking timer (takes a few minutes to heat up); the trick is to remove them immediately upon completion and put them in ice water. Grilled some squash, zuchini and peppers too. It was 74 here before it started raining. You could always throw a can of beans on or bake some tater tots. I'll probably make spaghetti tonight.
