vuduchile 1,941 Posted September 12, 2019 I'm open to most any fish if it's fresh. The Mahi Mahi I had in Puerto Vallarta was probably the best fish I've ever had. I also had really good salmon in Seattle. Perch is the big thing around here and fresh trout is delicious. Coho, King and Chinook salmon are regularly caught up this way, but none of these are as good as saltwater fish. Love all kinds. shellfish, salmon, and seared ahi are kinda different IMO than "regular" fish. Love them. My wife's goto way to cook a big strip of salmon is on a cedar plank on the grill. It's like smoked salmon and it's awesome. Sea bass is my favorite "regular" fish. Like MDC I tend to the lighter, flakier fish. Had a cajun trout last night at a restaurant, it was quite good. Hawkeye21 1,924 Posted September 12, 2019 Most fish I eat is fresh water fish that is caught in local waters. Walleye, northern pike, perch, catfish, bluegill, crappie and trout. How I prepare it varies but generally not a lot more than a little salt, pepper, olive oil and lemon juice or lemon zest. Feeling better about my skills. Listening to NPR radio a few months later... "Want the easiest food to cook? Try salmon! Can't undercook, can't overcook!" Guess I still can't cook.
